180ml water

  • Add a splash of water if the blender struggles

Basil, Parmesan and Cashew Dip

Ingredients:

1/3 cup cashews

250g fresh basil

1/3 cup grated parmesan cheese

½ crushed garlic clove

1/3 cup olive oil

Instructions:

  • Place the nuts, basil leaves, parmesan, and garlic into a blender jug
  • Blend for several minutes
  • Add the olive oil

Ingredients:

100g cashew nuts

3 tbsp coconut cream

1-2 juiced limes

2 tbsp Bombay spice mix

2tbsp korma curry paste

Instructions:

  • Blend all the ingredients, except the Bombay mix
  • Season to taste
  • Add a splash of lime juice if the mixture is too thick
  • Sprinkle over the Bombay mix
  • Serve with naan bread, carrot sticks, and chicken skewers

Avocado Cashew Dip

Ingredients:

1 small avocado, peeled

½ cup raw cashews

1 small jalapeno, seeded

¼ cup cilantro, chopped

1/8 tsp cayenne pepper

1/8 cup lime juice

3 cups filtered water

Instructions:

  • Soak the cashews in boiling water for 30 minutes
  • Drain the cashews and blend them with ¼ cup of water
  • Puree 1 small avocado with this cashew cream, cayenne pepper, cilantro, japaleno, lime juice, and salt
  • Serve with your favorite vegetables

Chunky Coriander Cashew Dip

Ingredients:

½ cup raw cashews

1 tbs parmesan grated

2 cups coriander roughly chopped

1 tbs semi-dried tomato

½ tbs chili crushed optional

Instructions:

  • Put all the ingredients in a blender jug
  • Blend until dip is of a desired consistency
